Forget about it.
I found where to modify the text...
For those who don't know, go to the "booking States" tab in the administration page and edit each state, you will be able to add the text for each language.

I searched the language files but the description is not there.
If my calendar is in French or Spanish, it can't show "booked" or "Provisional", it has to show the legend (the "key") in French or Spanish...
